BLISS SUPERFOOD MUFFINS

I’m always trying to come up with new, easy-to-make, delicious & clean recipes for you all! I know for a lot of you, the kitchen isn’t necessarily your happy place, but, I hope to change that- one recipe at a time.

 

Introducing….. the seriously-damn-good Bliss Superfood Muffins! These gems are packed with whole, nutritious powerhouses like coconut, flax and chia seeds, fresh organic blueberries, raw honey and organic, free-range eggs. It’s important to not skimp on the quality of the ingredients so you get the most bang-for-your-buck nutrition from each any every bite.

 

Here’s the awesome health benefits of the ingredients:

Coconut oil: I mean, I could go on for days about what coconut oil can do for your health. From improved immunity and weight loss to better hair, skin, and nails, this healthy fat is a must in everyones’s diet (unless, you have allergies).

Flax and Chia seeds: Hello, my little friends. These super seeds pack in the protein, plant-based omega 3’s, and are a good source of fiber.

Blueberries: I consider blueberries the king/queen of all the fruits. They’re loaded with antioxidants, are low glycemic, and pretty much taste great in everything- salads, desserts, and smoothies. Blueberries are on EWG’s Dirty Dozen List, so make sure you buy organic!

Raw Honey: Raw honey, nature’s natural sweetener, is full of antioxidants; rich in important minerals, like iron, zinc, and calcium; and contains nutraceuticals that help neutralize damaging free radicals. Be sure to look for RAW honey as the commercial stuff is often heavily processed and chemically refined.

bliss superfood muffins

MAKES 12 MUFFINS
Adapted from Nutiva Naturals
  • 1 cup coconut flour, sifted
  • 1/2 teaspoon pink Himalayan sea salt
  • 1 teaspoon baking soda (non-aluminum)
  • 1/2 cup + 2 tablespoons raw honey
  • 1 cup canned coconut milk (I use Native Forest)
  • 6 organic eggs
  • 1/4 cup coconut oil, melted, plus more for greasing pan
  • 1 1/2 tablespoons pure vanilla extract
  • 1/4 cup ground mixed flax and chia seeds
  • 1 cup fresh blueberries

Preheat oven to 350 degrees. Grease muffin pan with coconut oil or use muffins liners. Combine coconut flour, baking soda, and salt in a small bowl. In another large bowl or mixer bowl, whisk raw honey, coconut milk, eggs, coconut oil, and vanilla. Slowly stir dry ingredients into the wet mixture. Mix in flax and chia seeds. Gently fold in the blueberries and pour batter into the muffin tins, not quite to the top. Bake for 25 minutes until muffins are cooked through and turn golden brown. Remove muffins from tins and cool on wire rack. Enjoy!
