I love, love, love pizza. Ever since I have been gluten, dairy, and egg-free, I have been on a quest to find a delicious at-home pizza crust. Sadly, most store-bought crusts either take like cardboard and/or are filled with crappy ingredients. I wasn’t having it. I searched all over the internet for recipes that met my specific (and high maintenance) criteria- it had to have no gluten, dairy, egg, or grains. Finally, I came across a recipe that I was able to tweak and modify to my liking. And…. it is delicious!!!!! I have to give props to Paleo Running Momma for the original recipe, but here is my gluten-free, grain-free, egg-free, and vegan version:
Welle Pizza Crust
- 1/2 cup blanched almond flour
- 3/4 cup tapioca flour plus 2-3 tbsp more for kneading dough
- 6 tbsp coconut flour divided into 3 (first) and 3 (after adding the aquafaba)
- 3/4 tsp sea salt
- 1/3 cup warm filtered water
- 1/3 cup extra-virgin olive oil
- 1 tbsp raw apple cider vinegar
- 3 tablespoon aquafaba (drained liquid from can of chickpeas)
Directions

Preheat oven to 450 degrees and line a baking sheet with parchment paper.

In a large mixing bowl, combine the almond flour, tapioca, 3 Tbsp of the coconut flour, and salt. Stir well to combine.

In a measuring cup, combine the water, olive oil, and vinegar, then pour into the dry mixture and stir with a wooden spoon until a dough forms.

Now stir in the 3 Tbsp of aquafaba to combine well. Slowly add the remaining 3 Tbsp of coconut flour, one tablespoon at a time, mixing after each one. You want the dough to be a little sticky yet able to knead (Note: don’t add more than 3 additional Tbsp of coconut flour). Form dough into a ball.

Sprinkle extra tapioca on your parchment lined baking sheet, transfer the dough to the sheet and sprinkle with more tapioca. Work the dough into a 10-12 inch circle, depending on your desired thickness.

Bake in the preheated oven for 10-12 minutes until crust starts to brown and crisp. Then, remove from oven.
- Top with your favorite sauce and toppings and return to oven. Bake until crispy!
